AVOCADO EGGS

Who would've thought?

You can bake your eggs right in avocado halves for a healthy breakfast option!

Take your budget-friendly, high-quality protein option and combine it with your favorite green fruit to start your day right.

 

INGREDIENTS

  • 4 avocados

  • 8 eggs

  • Salt and pepper to taste

  • Everything but bagel seasoning

COMPONENTS

  • Baking tray

  • Spoon for scooping

METHOD

PREHEAT oven to 425℉ and lightly coat a baking tray with nonstick spray​

SCOOP out some avocado flesh (after removing the pits), creating a small well in the center of each avocado.

CRACK 1 egg into each avocado well. (It's ok to make a mess). 

BAKE in the oven until egg whites have set, about 10-15 minutes. 

SERVE with your everything but bagel seasoning.

NOTES

STORAGE: Store any leftovers in an airtight container for 3-4 days in the fridge; however, they taste better if you eat them right away.

TIPS: You can top them with any herbs and spices you want | Add hot sauce
