BREAKFAST BURRITO

This loaded breakfast wrap is snuggled with scrambled eggs, meat, veggies, plus a layer of creamy melted cheese - grilled to golden brown perfection...

It's extremely loaded, crunchy, cheesy, filled with goodness, yummy...

INGREDIENTS

  • 3 eggs

  • 1 lb ground meat

    • I used ground turkey​

  • Salt and pepper to taste

  • 7 oz. shredded cheese

  • 1 cup veggies of choice

    • I used mushrooms and bell peppers​

  • 2-3 burrito sized flour tortillas

  • Coconut oil for frying

  • Hot sauce for serving

    • I used Sriracha​

COMPONENTS

METHOD

BROWN the sausage in a large nonstick skillet. When the sausage is cooked, turn the heat down, add the eggs with the sausage and gently stir around until just set.

CUT 1 tortilla into fourths - you'll use these as filler pieces.  

Layer sausage and egg mixture, your veggies, and cheese on a tortilla. 

PLACE a filler piece of tortilla over the top and fold the edges of the tortilla inwards, once section at a time.  

 

PLACE on a hot skillet and cook for a few minutes until crunchy and golden. 

SERVE and enjoy!  

NOTES

STORAGE: Store any leftovers in an airtight container for 3-4 days in the fridge. 

FREEZER: You can freeze them for up to 3 month wrapped in aluminum foil and then in a freezer-safe bag. To re-heat, thaw in the fridge overnight and bake in a 350oven until heated through. I would avoid the microwave so that the vegetables don't have a rubbery texture.

SUBSTITUTIONS: You can use any vegetables | Replace the cheese with any other you'd like | No meat to make vegetarian
