GRANOLA

Want an easy and highly nutritious snack to have on hand?

Lemon zest and ginger brighten up this granola as it bakes.

Not only does it energize you at any time of the day or night, but it makes your home smell incredible.

 

COMPONENTS

  • Mixing bowl

  • Mixing utensil

  • Sheet pan

  • Parchment paper

  • Serving jar or bowl

INGREDIENTS

  • 3 cups old-fashioned oats

  • 1 cup dried, shredded coconut

  • 1 cup mixed nuts

    • I use walnuts & cashews 

  • 1/2 cup brown sugar

  • 1/2 cup water 

  • 1 tsp grated ginger

  • Zest of 1 lemon

  • 2 cups of dried fruit of choice​

  • 1/4 cup dates

METHOD

PREHEAT oven to 325℉. 

MIX the all ingredients except dried fruit.

SPREAD the granola evenly on a large sheet pan lined with parchment paper. 

BAKE for 30 minutes, checking regularly and giving it a quick stir for even baking.

 

TOSS in the dried fruit when the granola is golden and remove it from the oven. 

NOTES

STORAGE: Store any leftovers in an airtight container for up to 6 weeks. 

SUBSTITUTIONS: You can use any nuts of your choice | use any dried fruit of choice | add flaxseeds if you want | use coconut sugar, maple syrup, or honey instead of brown sugar 

HOW TO EAT: You can eat it as cereal with your choice of milk | Over yogurt of choice.
