LEMON POPPYSEED COOKIES
If you love the taste of shortbread and lemons then this one's for you.
These cookies are soft, tender, and bursting with lemon flavor in every bite!
A perfect Summer or Spring dessert that won't last very long on your kitchen counter because they're so addicting.
PREHEAT oven to 350℉.
MIX together all ingredients in an electric stand mixer
SEPARATE the dough into 2 equal sized balls and form into 2 long rolls about 1 inch wide and 12 inches long.
WRAP each roll in plastic wrap and chill in refrigerator for 3 hours.
SLICE the dough into cookies about 1/4 inch thick and lay on cookie sheet.
BAKE for 20 minutes until golden
SERVE and enjoy!
STORAGE: Store any leftovers in an airtight container for 3-4 days on the counter.
TIPS: Sprinkle some lemon zest on the cookies.
