PEACH CAPRESE

The quality of your tomatoes make all the difference in this salad.

No pressure, but pick the brightest and ripest tomatoes you can find.

This is my go-to light and bright salad of the summer, eaten as is.

 

INGREDIENTS

SALAD

  • 1 1/2 lb heirloom tomatoes

  • 2 firm peaches

  • 3/4 cup basil leaves

  • 2 balls burrata

  • 2 tbsp balsamic glaze

DRESSING

  • 2 tbsp olive oil

  • 2 tsp white wine vinegar

  • 1 clove garlic, minced

  • Salt & pepper to taste

COMPONENTS

  • Mixing bowl

  • Serving platter

METHOD

MIX ​the dressing ingredients with the tomatoes, in a large bowl.

ARRANGE the tomatoes, peaches, and burrata on a large platter.

SPRINKLE the mint, lifting some of the salad from underneath to the top. 

DRIZZLE the balsamic glaze goodness throughout the salad.

NOTES

STORAGE: Store any leftovers in an airtight container for 3-4 days in the fridge. 

SUBSTITUTIONS: Use any type of vinegar you have for the dressing. | Any kind of tomato works for this salad - as long as they're ripe. | Mint instead of basil.
