Not every salad needs lettuce. Personally, those are my favorite.
This quinoa salad is a perfect example.
Plus, it's super refreshing and so photogenic!
1/4 cup olive oil
1 tbsp red wine vinegar
1 tbsp lemon
1 garlic clove, minced
Salt & pepper to taste
1 cup cooked quinoa
1 cup grape tomatoes, halved
3-4 mini cucumbers, chopped
1 cup red onion, chopped
1 large avocado, chopped
1/4 cup mint, chopped
WHISK together the dressing ingredients and set aside.
PLACE all ingredients in a bowl and mix together.
SERVE and enjoy!
