QUINOA SALAD

QUINOA SALAD

Not every salad needs lettuce. Personally, those are my favorite.

This quinoa salad is a perfect example.

Plus, it's super refreshing and so photogenic!

 

INGREDIENTS

DRESSING

  • 1/4 cup olive oil

  • 1 tbsp red wine vinegar

  • 1 tbsp lemon

  • 1 garlic clove, minced

  • Salt & pepper to taste

SALAD

  • 1 cup cooked quinoa

  • 1 cup grape tomatoes, halved

  • 3-4 mini cucumbers, chopped

  • 1 cup red onion, chopped

  • 1 large avocado, chopped

  • 1/4 cup mint, chopped

COMPONENTS

  • Chopping Board

  • Sharp knife

  • Mixing bowl

  • Serving plates

METHOD

WHISK together the dressing ingredients and set aside.​

PLACE all ingredients in a bowl and mix together.

SERVE and enjoy!

STORAGE: Store any leftovers in an airtight container for 3-4 days in the fridge. 

SUBSTITUTIONS: You can add protein (chicken, pork, beef). | Change your veggies to what you have available!
