AVOCADO MANGO SALSA

Toss everything together and top with lime juice over It all. BAM - that's all. So ridiculously easy to make. An Avocado Mango Salsa to enjoy over rice, meat, chips, or on its own.

INGREDIENTS & EQUIPMENT

For Coconut Rice:

1 ½ cups Coconut Water

1 ¼ cups Coconut Milk

1 ½ cups rice

½ tsp salt

For Avocado-Mango Salsa

1 large mango

¼ cup red onion

¼ cup chopped cilantro

1 large avocado

Juice of 1 lime

1 tbsp Olive Oil

Salt & pepper to taste

METHOD

BOIL coconut water, coconut milk, rice and salt in a medium pot. Cover and simmer until liquid has been absorbed, about 20 minutes.

TOSS together mango, cilantro, red onion, avocado, lime juice, olive oil and salt.

SERVE coconut rice with avocado mango salsa.

NOTES

LEFTOVERS: Store any leftovers in an airtight container for 3-4 days in the fridge.
