GLUTEN FREE BANANA BREAD
INGREDIENTS & EQUIPMENT
2 cups 1:1 flour
¾ tsp baking soda
½ tsp salt
1 cup sugar
¼ cup butter, softened
2 eggs
3 bananas, mashed
1/3 cup low-fat yogurt
1 tsp vanilla extract
mini chocolate chips, optional but not ;)
Stand Mixer
Measuring cups and spoons
Whisk
Mixing bowl
Loaf pan, 8.5 x 4.5 inch
Parchment paper
METHOD
PREHEAT oven to 350F
MASH bananas and stick in the fridge while you do the other steps
COMBINE flour, baking soda and salt, in a separate bowl, stirring with a whisk
BEAT sugar and butter in a stand mixer at medium speed until soft and well combined
ADD eggs, one at a time, beating well after each addition
ADD banana, yogurt, and vanilla; beat until blended
ADD flour mixture to wet mixture and beat until moist
MIX in chocolate chips, optional
SPOON batter into an 8.5 x 4.5 inch loaf pan, coated with cooking spray or parchment paper
BAKE for 1 hour at 350F
NOTES
SWAPS: You may use regular flour, it works great
HACK: Cut small strips of unsalted butter and place randomly on top of your batter (in your loaf pan) to create crunchy ridges while it's baking in the oven OR cut long thin strips of extra banana to garnish on top of your batter (in your loaf pan) to create texture while it's baking
