HAMANTASHEN FILLING
INGREDIENTS & EQUIPMENT
2 cups mixture of dried fruit - I used pitted prunes, cherries, and figs
1 cup dark raisins
¾ cup water
⅓ cup lemon juice
⅓ cup sugar
¼ tsp cinnamon
small saucepan or medium-sized pot
wooden spoon
measuring cups & spoons
food processor
jar to store
METHOD
COMBINE the prunes, cherries, figs, raisins, water, lemon juice, sugar, and cinnamon in a small saucepan over low heat
STIR the fruit to soften the prunes, about 8-10 minutes (make sure the bottom doesn't stick, and lower the. heat if the mixture starts to boil)
REMOVE the mixture from the heat and place it in the bowl of the food processor
COOL for 5 minutes
PROCESS the mixture to thin the filling
TASTE the filling. and add extra sugar (a tbsp at a. time) at this point if required. The filling should be thick and moist
CHILL the mixture slightly before using
NOTES
LEFTOVERS: Fridge for up to 2 weeks or in the freezer for up to 6 months
GET FUNKY WITH IT: You can use almost any combination of dried fruits. Try the prune recipe, but use 2 cups of dried fruit made up of any combination of the following ½ cup each dates, raisins, dried pears or peaches, cherries or figs.
