MEAT STUFFED BOUREKAS in RICE PAPER
INGREDIENTS & EQUIPMENT
3 tbsp grapeseed oil
1 large onion, diced
1 lb. lean ground beef or ground turkey or ground chicken or a mixture
¼ cup raisins or currants
2 tbsp apricot or raspberry jam
2 tbsp sesame seeds
¼ tsp nutmeg
¼ tsp cinnamon
½ tsp cumin
salt to taste
rice paper wraps
1 egg for egg wash
sesame seeds
Large skillet
Spatula
Glass baking pan
Cutting board
Baking sheet
Parchment paper
Pastry brush
Measuring cups and spoons
METHOD
PREHEAT your oven to 350F
HEAT oil in large skillet
ADD and saute the onion until golden
MIX in the ground meat and raisins/currants
ADD in the jam, sesame seeds, nutmeg, cinnamon, cumin, and salt
STIR together and cook to brown, around 15-20 minutes
REMOVE skillet from heat
SOAK the rice paper wraps in a bowl of warm water to coat both sides
TAKE the wraps out of the water and place on a cutting board
DISH the meat onto the rice paper and wrap them up
PLACE rice paper wraps onto a baking sheet lined with parchment paper
BRUSH egg wash to coat the wraps
SPRINKLE the tops with sesame seeds
COOK meat bourekas in oven for 15-20 minutes or until golden on the outside
REMOVE from oven and serve warm
NOTES
SUBSTITUTIONS: Feel free to swap the meat with mushrooms to make as a vegetarian option
