OATMEAL CHOCOLATE CHIP COOKIES

INGREDIENTS & EQUIPMENT

1 ⅓ cups oat flour

1 tsp baking soda

1 tsp salt

¼ tsp cinnamon

1 cup almond butter

3 tbsp coconut oil

1 cup maple syrup

2 tsp vanilla extract

1 ½ cups rolled oats

1 ½ cups chocolate chips

baking sheets

parchment paper

stand mixer

measuring cups & spoons

METHOD

PREHEAT oven to 350F and line two baking sheets with parchment paper

PLACE oat flour, baking soda, salt, and cinnamon in a mixing bowl and whisk together

ADD oil, maple syrup, and vanilla and mix together until the consistency of a natural nut butter has formed

FOLD in rolled oats and chocolate chips

FORM dough into balls and place on baking sheets

BAKE 15 minutes or until cookies become golden

NOTES

HOW TO: If you need to make oat flour, place 1 1/34 cups rolled oats in a food processor and process until powdery
