PEACH CAPRESE

The quality of your tomatoes make all the difference in this salad. No pressure, but pick the brightest and ripest tomatoes you can find. This is my go-to light and bright salad of the summer, eaten as is.

INGREDIENTS & EQUIPMENT

SALAD

1 1/2 lb heirloom tomatoes

2 firm peaches

3/4 cup basil leaves

2 balls burrata

2 tbsp balsamic glaze

DRESSING

2 tbsp olive oil

2 tsp white wine vinegar

1 clove garlic, minced

Salt & pepper to taste

Mixing bowl

Measuring cups and spoons

Serving platter

METHOD

MIX ​the dressing ingredients with the tomatoes, in a large bowl.

ARRANGE the tomatoes, peaches, and burrata on a large platter.

SPRINKLE the mint, lifting some of the salad from underneath to the top.

DRIZZLE the balsamic glaze goodness throughout the salad.

NOTES

LEFTOVERS: Store any leftovers in an airtight container for 3-4 days in the fridge.

SWAPS: Use any type of vinegar you have for the dressing. | Any kind of tomato works for this salad - as long as they're ripe. | Mint instead of basil.
