PUMPKIN PIE GRANOLA
INGREDIENTS & EQUIPMENT
3 cups rolled oats
1 ¾ cup any nuts (pistachios, almonds, sunflower seeds, etc.)
½-1 cup coconut shreds
⅓ cup pumpkin puree
¼ cup brown sugar
¼ cup maple syrup
¼ cup olive oil
1 ½ tsp pumpkin pie spice
½ tsp cinnamon
1 tsp vanilla extract
OPTIONAL
dried cranberries, dates, raisins, and cherries to taste

parchment paper
mixing bowl
measuring cups and spoons

METHOD
PREHEAT oven to 325F and line a rimmed baking sheet with parchment paper
COMBINE oats, nuts, and coconut shreds in a large bowl
WHISK together sugar, maple syrup, pumpkin puree, vanilla extract, and olive oil in a separate bowl
POUR wet ingredients into oat mixture and combine well until everything is coated
SPREAD mixture in an even layer on the baking sheet
BAKE for 30-40 minutes until lightly toasted
REMOVE from oven and add dried fruit until it's cooled completely
