QUINOA SALAD

Not every salad needs lettuce. Personally, those are my favorite. This quinoa salad is a perfect example. Plus, it's super refreshing and so photogenic!

INGREDIENTS & EQUIPMENT

DRESSING

1/4 cup olive oil

1 tbsp red wine vinegar

1 tbsp lemon

1 garlic clove, minced

Salt & pepper to taste

SALAD

1 cup cooked quinoa

1 cup grape tomatoes, halved

3-4 mini cucumbers, chopped

1 cup red onion, chopped

1 large avocado, chopped

1/4 cup mint, chopped

Chopping Board

Sharp knife

Measuring cups and spoons

Mixing bowl

Serving plates

METHOD

WHISK together the dressing ingredients and set aside.​

PLACE all ingredients in a bowl, chopped to your liking, and mix together.

SERVE and enjoy!

NOTES

STORAGE: Store any leftovers in an airtight container for 3-4 days in the fridge.

SUBSTITUTIONS: You can add protein (chicken, pork, beef). | Change your veggies to what you have available!
