½ tsp salt

¼ cup butter, softened

1 cup sugar

2 eggs

3 bananas, mashed

⅓ cup low-fat yogurt

1 tsp vanilla extract

PREHEAT oven to 350F

MASH bananas and stick in the fridge while you do the other steps

COMBINE flour, baking soda and salt, in a separate bowl, stirring with a whisk

BEAT sugar and butter in a stand mixer at medium speed until soft and well combined

ADD eggs, one at a time, beating well after each addition

ADD banana, yogurt, and vanilla; beat until blended

ADD flour mixture to wet mixture and beat until moist

MIX in chocolate chips, optional

SPOON batter into an 8.5 x 4.5 inch loaf pan, coated with cooking spray or parchment paper

BAKE for 1 hour
