2 cups mixture of dried fruit - I used pitted prunes and dried apricots - or use figs, dates, and prunes

1 cup golden raisins or dark raisins

¾ cup water

⅓ cup lemon juice

⅓ cup sugar

¼ tsp cinnamon

small saucepan or medium-sized pot

wooden spoon

measuring cups & spoons

food processor

jar to store

COMBINE the dried fruit, raisins, water, lemon juice, sugar, and cinnamon in a small saucepan over low heat

STIR the fruit to soften the prunes, about 8-10 minutes (make sure the bottom doesn't stick, and lower the. heat if the mixture starts to boil)

REMOVE the mixture from the heat and place it in the bowl of the food processor

COOL for 5 minutes

PROCESS the mixture to thin the filling

TASTE the filling. and add extra sugar (a tbsp at a. time) at this point if required. The filling should be thick and moist

CHILL the mixture slightly before using
