2 lbs mixed baby potatoes, halved
¼ cup olive oil
2 tsp honey
4 cloves garlic, crushed
¼ cup oregano
1 lemon, quartered
2 baking trays
parchment paper

PREHEAT oven to 425F and line 2 baking trays with parchment paper
TOSS the potatoes with olive oil, honey, garlic, oregano, and lemon
ROAST for 45 minutes or until crispy
SEASON with salt & pepper, rosemary, or extra honey
