3 cups rolled oats
1 ¾ cups any nuts (pistachios, almonds, cashews, sunflower seeds, pumpkin seeds, etc.)
½-1 cup coconut flakes
¼ cup brown sugar
¼ cup maple syrup
⅓ cup pumpkin purée
1 tsp vanilla extract
¼ cup olive oil
1 ½ tsp pumpkin pie spice
½ tsp cinnamon
raisins, to taste (optional)
dates, to taste (optional)
large mixing bowl (dry ingredients)

small mixing bowl (wet ingredients)

PREHEAT oven to 350F and line a rimmed baking sheet with parchment paper
COMBINE oats, nuts, and coconut flakes in large mixing bowl
WHISK together brown sugar, maple syrup, pumpkin purée, vanilla extract and olive oil in a separate small mixing bowl
POUR wet ingredients into the oat mixture
ADD pumpkin pie spice, cinnamon, and combine until everything is coated evenly
SPREAD mixture in an even layer on the baking sheet
BAKE for 20 minutes until lightly toasted
REMOVE from oven
ADD dried fruit until cooled completely
STORE in an airtight container
