QUINOA SALAD

INGREDIENTS

¼ cup olive oil

2 tbsp, or more, lemon juice

1 tbsp red wine vinegar

1 garlic clove, minced or crushed

salt & pepper to taste

1 cup grape tomatoes, halved

1 cup quinoa, cooked

3 cucumbers, chopped

½ cup red onion, chopped

1 avocado, chopped

¼ cup mint, chopped

EQUIPMENT

measuring cups & spoons

chopping board

sharp knife

small bowl or cup to mix dressing ingredients

mixing bowl for salad

METHOD

WHISK together the olive oil, lemon juice, red wine vinegar, garlic, and salt & pepper and set aside

PLACE all ingredients in a big bowl, chopped to your liking, and mix together

ADD your dressing on top and combine together

SERVE and enjoy
